Hi,
a fish tank is probably the worst habitat for a tortoise, especially a fish tank with a lid.
A rubbermaid container is better, more air circulation and more floor space.
I don't have time to post much info now, so check out these web site. Also lose the strawberries, no fruits for sulcatas.
Sulcatas are grazing herbivores they require a lot of fibre. In the wild they graze on grasses, clovers, vetches and other edible plants.
You can feed Endive, dandelions, escarole, chicory, romaine........
DO NOT FEED iceburg lettuce, cabbage, spinach, chard or veggies like corn, peas, beans, brocoli, coliflower.
You can feed hibiscus flowers, mulberry leaves and add a little grated carrot or yellow squash to the greens.
When the tortoise can go outside, grazing on grasses, edible weeds, flowers etc is the best diet. Make sure you don't offer toxic flowers/plants.
Anyway check out these web pages:

Post again if you have more questions.
Terry.
