Picky Russian

Hi, I have a female Russian tortoise who's very particular about what she eats. I could usually get her to eat stuff like radiccio, frisee, arugula and the like, but lately I've started giving her green beans and now that's all she wants to eat. I've tried giving her the usual favorites but if she finds no green beans she throws her food around her cage and/or pees on it. Then she goes off and sulks and refuses to eat anything. Are green beans good for her? What can I do to get her to eat something else?
