It seems to me people are making a mountain out of a mole hill with this oxalic acid stuff.
Tim, I agree completely. It seems that people often focus heavily on a single element (such as oxalates or goitrogens) and over- react by completely eliminating the offending green from the diet. As you stated, variety and moderation is the key.
