It has been my experience that, if you stop feeding a tortoise too much protein, the pyramiding will lessen with time. Our male sulcata was severely pyramidded when we bought him, but now his carapace is almost flat.
We've never had much luck with yellow-foots, so I don't know a good diet for them. Good luck!
