No torotise who has been recently eating is not only not going to starve over a few days, even a few WEEKS won't really hurt...
This is what I do...it is NOT cruel, and when that tortoise is hugry enough, it WILL eat. ANy animal will hold out if he thinks it is gonna get him what he wants...all animals (including us humans) do it.
