Hi,
variety is the key so try to feed at least two different types of leafy greens at each feeding.
Romaine lettuce, endive, dandilion, escarole, chicory etc.
NO iceburg lettuce, spinach or chard.

You can top the greens off with a little grated carrot or/and yellow squash or yam. You can also feed food/plants from your yard. Hibiscus, rose petals, no fertilizer or pestisides.
Try Turtle Cafe for edible/non toxic plant lists:

I have a pair of Russians, they get about two cups of greens daily, as EJ said I leave the leftovers in the enclosure and they come back and finish it off.But that's it for the day.
So for one Russian about a cup to a cup and a half should be plenty.

There's a very good Russian Tortoise email group at egroups.com. It's free to subscribe and you can unsubscribe any time.
I've limked it at the end of my post, it's a great list for both beginners and more experienced keepers of russian torts. So I recommend joining up.
Also if you haven't already a vet visit is a very good idea for any new Russian tortoise. Unless you paid $150 - $200 for it, it's wild caught. Wild caught tortoises are often infested with internal parasites ( worms) or have other health concerns, due to the stress and bad conditions they endure from the time of capture- shipping etc. If the tortoise has worms the vet will be able to treat it, and may give you Panacur to put on it's food. Don't use dog or cat dewormers or ivermectin, lethal to tortoises.
Hope this helps and congrats on your new tort.
Terry.
