Erica, I feed my sulcatas Romaine, escerole, endive, parsley, italian parsley, cilantro, basil, green leaf lettuce, bok choy, kale and gratted carrots. I will occasionally throw in some broad leaf weeds and bermuda grass when I can't make it to the market. Most groserys sell a prepackaged salid mix called spring mix which looks good. Check out the contents. What you want to do is mix it up as much as you can. With the above list I get 2 bunches of each and chop it up so the animals can't pick out what they like. I have a large number of animals. You can buy a bunch of each and use what the tortoises don't. (you'll be healthier for it). The stuff can last up to a week or so. I would stay clear of the tomatos as far as the sulcata is concerned or very occasionally at the most.
(or you can follow any of the other suggestions that are sure to follow)
Important point = variety.
