I feed as much as they will eat. If any is left over I leave it until they finish it. Sometimes it takes 2 days. The stuff just dries out. They still eat it.
As far as store bought greens being a problem, I don't see any. I've been raising tortoises on store bought greens for quite some time with no problem. If it's fit for human consumption I guess its ok of a tortie. What you do have to pay attention to though is variety and balance. Provide as much variety as possible and don't be affraid to experiment. Try herbs also.
Tortoises in general feed in the morning and late afternoon. Feed them then.
