All the foods you listed are great foods, so I'd let him munch away! I'm not sure where you live, but you need to watch for rodents (rats have done some serious damage to hibernating torts), birds (crows, hawks, etc.), raccoons, dogs, aggressive cats, certain ants. Like Eric wrote, russians are great burrowers and climbers. Mine are housed outside and sleep and hibernate in a big pile of hay stacked up in a corner (covered during the rainy season). So far that's stopped them from digging, but they're all different.
