You're right! Here's what I found, "High purine foods, which include peas, beans, mushrooms, shellfish, beef, and organ meats, should be used sparingly because they can contribute to gout if overused." I knew that was part of the reason not to feed the green beans, but after looking up purine (any group of bases, including several {as adenine or guanine} that are constituents of DNA or RNA.), I said, "Screw that! Protein content and bad calcium to phosphorous ratio is good enough!" In The Tortoise and Turtle Feeding Manual it states that a common phenomena in cases where excess dietary proteins are consumed by reptiles adapted for a low-protein diet is the specimen regularly excreting large concretions of solidified uric acid. Now, I know that uric acid is tied to gout, and gout is tied to kidney problems. Other than that, that's the best I can do.
If anyone would like to explain purine (and all the rest of it) I'd love to hear it.
