Pyramiding in itself is not bad. It is assumed that if pyramiding is present something is wrong. I believe that is true. There is no real evidence that pyramiding causes any health concerns but it is usually associated with other health concerns such as improper diet or improper environmental conditions. Most folks who have been keeping tortoises for any length of time will admit that the actual cause of pyramiding is basicly unknown and all the 'answers' out there are pure speculation. The best you can do is follow examples of the species you keep. Ask to see pictures and get very specific information on how others are keeping their animals with the results you are looking for.
In the case of sulcatas I found that a good variety of grasses and or greens is the way to go. Water and plenty of calcium constantly available and a good temperature range of 75 - 100 F for the tortoise to choose it's own comfort range when it wants to. I've had very good results with this.
