He gave you some basics and there's a lot to
find out about these guys. Dump the lettuce
and get some collard greens, mustard greens,
turnip greens, endive/chickory salad, for
starters and you can add to this a variety of
other things. Sulcatas really ought to graze
on grasses and clovers and weeds, so dandelions
are good, (dandelion greens can even be bought
in grocery stores). I give mine squash once
in a while (yellow and zuchinni), and then
a bit of green pepper, kale and carrots.
As you can see, variety is important.

If your tortoise isn't able to get outside for
much of the day, you will need to supplement with
vitamin D and a reptile light for its shell to
grow strong.
Good supplement that I use during the winter:
Rep-Cal's Phosphorous-Free "Calcium with Vit. D3"
and also Rep-Cal's "Herptivite", sprinkle a matchhead
bit of each over his food if he's not in the sun
daily.
