Romaine lettuce is not fibrous enough or nutritious enough to comprise the only green the tortoise gets. Steer completely clear of corn or peas, cabbages. Severely limit fruits to occasional treats, they should not comprise part of the diet. Opuntia Cactus (www.turtlecafe.net) is a better treat option anyway. Grated carrot is okay once or twice a week...most of the diet should be at mixture of at least three "allowable" greens per meal. Grape nuts are most certainly NOT recommended. In fact, I'd be curious to know who recommended those to you in the first place. Feeding once per day is fine, but in a proportioned amount to the age/size of the tortoise so you don't overfeed is necessary. Please see my caresheet for more info.
