Specifically, I'd add some timothy hay to his feed. Use your scissors and cut it up really fine, then mix it into your salad. You may need to sprinkle a little water in there to get it to 'stick' to the salad. It will add a lot of fiber to your guy's diet. If all of those are grocery greens, you might check out the Turtle Cafe link, where you can order seed mixes that can be grown in, or out, and would be a good addition to the diet. Also, you can order opuntia cactus, which is a real hit with sulcatas. You might think about sprinkling his food with additional calcium (and D3 if he's housed mainly indoors), or offering a cuttlebone for him to nibble on for calcium; since younger sulcatas grow very quickly, they need the calcium.
