Best way to think about a class herp set up is what are you trying to accomplish?
Tortoise's in the class room just really isn't a good idea, mainly for the reason that tortoise's
need room roam. The type you would want for a
class room situation based on personality and
overall "dinosaur" cosmetics is the type that
unfortunately get very big thus doing you no favors, or the Tort.
If I were you I would do 2 things, a nice aquatic set up in the class room will teach the children
great things about establishing ecosystems and maintaining them. You also may want to find a local tortoise breeder near you and become friends with them. Most herptoculturist's love to
educate and you can often talk them into leaving some reptiles for a week or so for study, that way you really get exposure and education to some magnificent creatures, without worrying about ownership.
In any event, I wish you luck on your decision.
