Eric and Giovanni have given you great advice.
I don't have much to add except that yes...
"fast growing" *usually* means pyramidded, not always, but in the majority of cases it does.
They are right, if you want one that will soon be large, just save up and buy a large one.

The right beginner species depends on where you live, what accomodations you can provide, how much you have to spend on food, if you want a hibernating species or not, etc.

For example, if you have unlimited resources to spend you can probably build any accomodations like barns, greenhouses, yards, misting systems or dehumidifiers or other items needed to meet requirements of almost any tortoise in any place geographically.

If you don't have unlimited resources, you will want to consider your weather, space available, feed funds, etc. You can overwinter any type of tortoise, even one who normally hibernates in wild. However, you can't hibernate a tropical, non-hibernating tort...

Perhaps if you fill in some of the blanks it will be easier for people to give you the pros and cons of different types.
