What you're seeing at shows is probably African spur thigh, right? African spur thighs (sulcatas) can grow to over 200 lbs in a matter of 20 years, so you have to be able to house them outdoors. Plus they have requirements -- warm (Hot!), dry weather (they don't hibernate). Check out Sulcata Station for specific info.
If you're looking at Mediterranian spur thighs (Testudo graeca), they don't grow near as large (maybe 12"), and have similar needs to the sulcata.
I have both of these torts and they're awesome, but I favor my med. spur thigh--his personality is much more personable. Use this link and go to the Tortoise Trust site -- they have info on all sorts of different torts (including these two). You'll be able to find out which type is best suited for your area and their care requirements.
