Outside of the size these are two very different tortoises personality
wise. Galops are very personable as adults. They will come to you
for hand feeding and for nothing else than to have their chin and neck stroked.
They will raise up high and stretch their necks out to the sky as you scratch their
necks. (it's an amazing thing).
Aldabras(the adults that I've encountered) are very shy will withdraw
or will even run away (a sight one would have to witness to beleive)
(seeing a 300lb+ tortoise RUN) As babies they are very similar to sulcatas
in personality. That is they do not withdraw or mind being touched on
the head and neck. They do run away when you put them down though.
In general they both have very active personalities.
Given a choise I would rather go with the Galops but will gladly settle with a couple
of little Aldabras.
