I can't get plants to grow! =)

I want to use plants in my outdoor enclosure for my sulcata, but I have found out that I do not have a green thumb. If I buy plants from a nursery how long would I have to let them grow before they would be ok for my tort to munch on? I have tried many many times to grow flowers from seeds and I seem to have no luck. The only thing that will grow for me is the grasses I have planted. I guess some people have a green thumb, but I on the other hand have a black one! LOL =)
