Torts need plenty of calcium and spinach is a food that negatively affects their absorption of the calcium. I'm sure someone else, or the tortoise trust site, will explain that better. About hibernating, russians need to be hibernated. To not allow it would be very stressful to your tort. The only reasons I wouldn't allow my russians to hibernate (and the site will give you more info also) would be because they're ill, or because they're hatchlings. How you hibernate your tort will depend on where you live.
