They are used to the grocery greens, many of them are sweeter than grazing mixes. The grazing mix is much healthier though!
If you feed him on a plate, try cutting off some of the grazing mix and feeding it on their plate.
Mix it in with the greens, but gradually feed less and less of the grocery greens. He will get hungry and compensate by eating the grazing mix.

I read that young tortoises sometimes eat the feces of older tortoises to get beneficial bacteria or enzymes into their system. Maybe that is what he is trying to do.
