In essence, yes. You make valid points. Bjorndal has done quite a bit on this (digestive coefficients in several species, e.g Desert tortoises and Redfoot/Yellowfoots), and I also agree with you re: the human aspects too. In fact, just finished reading a rather good book on the topic "Protein and Energy: A study of Changing Ideas in Nutrition" by K. J. Carpenter (Cambridge). Very interesting.
