The Sulcata tortoises grow quite large (being the 3rd largest species of tortoise in the world), and will eventually need to be kept outdoors in an area no smaller than 10 yards by 10 yards(taken from "The Complete Idiot's Guide to Turtles & Tortoises"). They can grow to over 200 pounds. Your little tortoises are probably a couple months old and you will probably not be able to tell the sex until they are a couple of years old.
They will need a much more varied diet than cucumbers and lettuce, try giving other fruits, vegetables, and weeds (that have no pesticides).
