More thistle Q's and other weeds

I'm not very good at identifying plants, so bear with me.

I live in Central New York State. I THINK the thistles we have in our yard are Musk Thistles (Carduus nutans). It seems that most thistle species would be okay for tortoises to eat (mine is a Leopard Tort). My mom would be most happy to have me feed these pesky plants to Buttercup. Do I just dig it up and give it to her? Can she eat the leaves and the flowers (which we don't have, but might later).

We also have several species of plantain - are they all okay? I've fed Buttercup the Buckhorn Plantain (Plantago lanceolata) and she loves it.

How about Dead Nettle or other wild mint? Obviously that would be a treat only.

I enlarged Buttercups daytime pen (we have raccoons out at night, so she comes inside to sleep). She seems to be enjoying the mix of grasses, clover, plantains and of course, dandelions.
