Hibernation or Brumation in North FL/ S GA?

What needs to be done for a 60 lb. alligator snapper that's in a 20 inch deep small pond in this kind of temp. zone? It just started to cool when I got him (50's at night brrrrr). He hasn't eaten anything in the last week (the whole time I've had him) as far as I can tell. He's not overweight at all but I can't tell if he's underweight. 60-62 lbs with 19 inch straight shell length is healthy, right? Do I need to do anything special for him until it warms up? Is it a waste to put a bunch of fish in with him now?
