It is normal for virgin or stressed females to lay only one egg. So since she went through a move and new setup it is nothing out of the norm. However single eggs are usually but not always unfertile. In about 5-8 days candle it to see if it fertile or not. Just use a small flashlight and place it up against the egg. If you see a pinkish glow your good to go =)
