Animals growing to suit their surroundings is a common myth. No matter what the size of the cage they will continue to grow and just get cramped. 15 gallons is fine for one adult, I keep most of mine in cages of similar size. However there is absolutely no problem with going bigger, esp when you are eventually going to introduce a male into the cage for breeding.
