For someone who has snake keeping experience, taiwans do not differ in requirements enough to qualify an impule purchase as a cardinal sin.
Their care is very straightforward, and I'm sure you will recieve alot of enjoyment out of your new addition.
The only change I would make to your setup would be to lower the temp on one end to about 75°F. Mine prefer this range, and even a few degrees cooler if not digesting food.
Switching over to prekilled should be a nonevent, these snakes have voracious appetites and are always hungry.
Feed her well and you can expect her to reach around 4 feet in the first year, while remaining relatively slender. After this they will continue to add length but will also gain more in girth. As adults they are impressive snakes, while remaining manageable.
Enjoy your new snake, taiwans are among my favorites to work with.
