In my experience, the tamest overall ratsnake is the Amur Ratsnake (E. schrencki). I have worked with both captive bred and imported adults and they have proven to be extremely placid snakes, not squirming and thrashing like some of the smaller eurasian ratsnakes, and not one has even assumed a threat posture in my prescence, let alone struck or bitten. That could just be my experience though.
