I mist the enclosures every few days, and then daily during the shed cycle. As far as the substrate goes, the sphagnum should do fine. Don't keep it moist though, but I'm sure you already know that. One thing that would be perfect is to offer a humidified shelter like a tupperware bowl containing damp sphagnum with a hole in the lid, that is if yours will make use of it. I tried this approach with no success, as they preferred to burrow in the substrate.

The display is quite interesting to watch, and I remain fascinated by it, I just wish there was a little more bluffing involved. The term "threat display" is not quite appropriate, as that reminds one of the cute displays of the hognose snakes, which practically never back it up with actual agression. The radiateds on the other hand never bluff, and if they flee it's only to gain a better position from which to strike. My rads can bite me 4 or 5 times in the same amount of time it takes one of my young carpets to bite once.
Leave them to their own devices a while and I'm sure they will introduce you to their evil side, lol. I should add that when mine are completely in hand, they are much less likely to bite, only very flighty at that point.
