Your description has me stumped, but it doesn't sound like any Everglades rat I've ever seen. Does it have a red tongue? If not, you can pretty much eliminate 'glades.
On second thought, your description might not be too far off from a Baird's Rat Snake. When you say "the underside is yellow which gives way to a mix of brown, yellow and red at about half way to three quarters way down the body", do you mean there's some sort of pattern on the posterior of the underside or is it a "solid" mix of those colors? Any way you could post a picture?
