I wouldn't worry too much. If his stools looked normal last time he defacated, he is probably fine. I have two grey rats, and they have both done this a time or two. The female just stops eating for a while. She has never seemed ill, and her cage amte continues to eat fine. Just keep trying to feed him on his regular schedule, and he will probalby eat in a couple weeks. You can also try offering him a slightly smaller meal than he usually eats, sometimes that seems to help.
Otherwise, if he is not shoeing any other signs of ill health, he probably just doesn't feel like eating right now
