Sleeping in the water dish could be several things, likely a) he is stressed and the water is the only place he feels safe (has he dug is own burrow?) or b) he is dehydrated.

Those are the two main causes I've seen for soaking with every type of reptile I've encountered.

As for being uninterested in crickets; based on experience with other herps, he is likely cold, but more likely very stressed. A big animal (you) just picked him up, put him in an alien environment, then picked him up and put him home again. He probably thought he was going be eaten that whole time, so its understandable that he would be so scared he won't eat.
