Strange, I've never met or heard of anyone with a strange anti-skink fixation. Maybe they look too much like snakes for her. Too bad, blue-tongues would be perfect :). You could also get a red bearded dragon, a water dragon.... hmmm.... most colorful 1-2 foot tame lizards go a bit over your price range. I'm thinking of ackies, timor monitors, Leach's giant geckos... but they're all 200$ + in and of themselves. There are only a couple geckos that get a foot long. This is the gecko forum, right? I forget. There are some cool and relatively cheap Rhacodactylus that get about 8 inches and are way too cute, though.
My feeding method is the 'cracking the lid and dropping the food on the animal's head' method. It's a good thing crickets aren't heavy. Your results may vary.
Most of what I named aren't considered 'beginner' lizards, but you sound pretty responsible to me. None of them are that hard with a bit of forethought.
I wish I could build my own fishtanks. No, scratch that, then I'd be even more broke trying to fill them!
