You want to feed bugs as much as possible...so that means crix. Especially if you are getting a tiny little one. Crix, roaches. You can do ground turkey diet from Pro Exotics site. DON'T cook meats. Though you can condition their digestive tract to not go nuts with cooked food it is so much healthier and simpler to feed room temperature raw meat...only low fat ones...ground venison, turkey. Not fatty or oily foods.
Certainly as your monitor grows you can add rat pups. You could keep your two boy rats and add a couple of girls. Rats aren't gonna kill each other with the vehemence that mice do. You will need to monitor them but they can be fine. I have three boys and three girls together in a big cage now. I am taking out the boys soon though as I don't want to breed the girls back to back.
