I've switched my corns over to rats mostly because it makes feeding easier... not when you're feeding only one rat pup, no.. but if you would normally be feeding that corn more than one adult mouse per feeding, it's easier just to feed them a larger rat (and lately I've had a good deal more luck breeding rats than mice). I've also noticed the adults will put on growth spurts if you move them up to larger rat sizes. As far as sizes go, the biggest size rat I've seen a cornsnake eat is a medium rat.
I can't comment on the nutritional value of young rats vs. older mice, but I haven't really seen any ill effects on my cornsnakes... (anecdotal evidence, I know...) I would imagine it partly depends on what the rats were fed, too.
One thing to watch out for, is that ratpups have larger heads than adult mice and may be slightly harder for smaller corns to swallow.
