That is something that is not unusual. When anoles are shedding for example, they will bulge their eyes out for a couple of seconds to make the dead skin come off faster. I would assume that your anole was shedding when he/she was bulging out his eyes. If not, it was probably trying to start the shedding process and you didnt stay long enough to see.
Is this the type of behavior you were referring to?
